Cool off with one of these Vegan Chocolate Raspberry Yogurt Bars! Summer is in full swing, the days are hot and humid, and what better way to find some relief than with a cold sweet treat? Made using only 6 simple ingredients, these bars are SO easy to whip up and have on hand. They’re dairy-free and use healthy and wholesome ingredients, and honestly, just taste way better than anything packaged and store-bought. They’re coconutty, fruity, and chocolaty...they’ve got it all going on!

The actual popsicle part of the bar is made with only coconut milk, coconut yogurt, maple syrup, and fresh raspberries. The coconut milk and yogurt give them rich creaminess, but without the need for dairy. Not to mention the tropical coconut flavor they add, which just screams summer. 

Healthy Vegan Chocolate Raspberry Yogurt Pops

The fresh raspberries are mashed and mixed in to incorporate their tart flavor throughout, while still offering bursting little bites of the fruit. Maple syrup sweetens the mixture, and you can really adjust the amount based on your preference. If you’re looking for something a little lighter and less sweet, you could even go without.   

Healthy Yogurt Popsicles

Dark chocolate chips and a little coconut oil make up the chocolate shell. I really love how the lightness and tartness from the coconut and raspberries compliments the richness of the dark chocolate. The two pair perfectly together and balance each other out in the best way. It’s a winning combo for sure.

Vegan Chocolate Raspberry Frozen Yogurt Bars

Vegan Chocolate Raspberry Yogurt Bars

Prep Time: 15
Chill time: 4 hours
Total Time: 4 hours and 15 minutes
Serves: 10 bars 

Ingredients

  • 1 (13.5oz) can of full fat coconut milk

  • 1 cup unsweetened plain coconut yogurt (I used So Delicious)

  • 1 qt fresh raspberries, rinsed 

  • ⅓ cup maple syrup 

  • 12oz dark chocolate chips (I use Enjoy Life)

  • 1 tbsp coconut oil 

Instructions

  1. In a large bowl, add the coconut milk, coconut yogurt, and maple syrup. Whisk together until well combined. Mash the raspberries and then add them as well. Mix until evenly distributed. 

  2. Pour the mixture into a popsicle tray, stick in popsicle sticks, and freeze for at least 4 hours or overnight. 

  3. Add the chocolate chips and coconut oil to a bowl. Microwave for 30 second increments until melted, stirring in between. Let the chocolate cool for about 10 - 15 minutes.

  4. Prepare a plate or baking sheet with parchment paper. Remove the popsicles from the freezer and tray. Dip into the melted chocolate so the popsicles are about ½ - ⅔ covered. Place them on parchment paper and drizzle with any extra chocolate. Place back in the freezer until ready to eat!
